Another fantastic cooking class at HOMExperience! We had a guest chef this evening – Chef John Egerton. He was chosen to host the Seafood Spectacular cooking class because of his vast experience with all sides of seafood. Chef John currently works for a wholesale fish supplier, has worked as a chef concentrating in seafood and even owned and operated his own commercial fishing vessel for a period of time.

His knowledge was incredible! We learned so much about the recipes and various ways to prepare fish, about different kinds of fish and the process and location for fishing it, even simple cooking tricks.




Did you know that if you oversalt a sauce or soup, you can simply cut a raw potato, add it to the pan for a few minutes and then remove it? That removes excess salt from the dish.


 

This evening’s class enjoyed Clams Casino, Mahi Mahi Veracruzana,A Volunteer Assists with the Clams Casino Preparation as well as Blackened Redfish accompanied by three delicious wine selections. Volunteers assisted in filleting the fish, making sauce for the Clams Casino, assisting with final preparations and more. Below are some photos of the evening.
